Division of Food Science and Human Nutrition
Our Mission
The mission of our department is to train experts who can play active roles in various fields of nutrition, such as education, research, hospitals, care facilities, public administration, and food-related industrial firms.
In pursuit of this mission, our department is devoted to academic excellence, distinguished by the creative interaction of teaching, learning, and research, and dedicated to improve the quality of life from the individual to society through nutrition.
Our Education
Our department is committed to providing broad nutritional education, a curriculum that challenges our students to learn broadly and think deeply. The curriculum consists of three major disciplines: Food quality, Biological function, and Nutritional care and management. Instead of training for one narrow field, our students are required to take lectures of all three disciplines in order to develop the knowledge and skills to succeed in various fields in nutrition.
Three major disciplines
Food quality: Research on analysis and quality evaluation of food in order to establish the supply of safe and high-quality food.
Biological function: Research to clarify the nutritional and physiological function of food ingredients in order to promote health through diet and disease prevention.
Nutritional care and management: Research to pursue appropriate0 dietary intake and meal service in each stage of the life cycle, from childhood to the elderly.
